Spring Menu

Here's a menu perfect for an afternoon spent with guests watching your favorite sporting event:

Turkey (or chicken) burgers with secret sauce

Whole grain spiced tortilla chips

Salsa

Guacamole

Chocolate dipped strawberries

 

Turkey or Chicken Burgers
Feel free to add your favorite mustard, sautéed peppers, spices and herbs
Makes about 5 burgers

 1 1/2 lb ground white turkey or chicken
1/2 each onion chopped
1 tb chopped fresh garlic
1/4 cup organic ketchup
2 tb low sodium tamari soy sauce
1 tb Dijon mustard
To taste ground black pepper
cooking spray

1. Spray a pan with  olive or canola cooking spray
2. Sauté onions for 2 minutes
3. Add garlic sauté 30 seconds
4. Remove from stove
5. Place remaining ingredients in a bowl
6. Add onion mixture, mix and make into 6 oz patties
7. You can freeze patties for use in the future
8. Spray a sauté pan  with cooking spray or  a griddle
9. Place burgers in warm pan or on a warm griddle and sear on each side
10. Finish cooking in a 350 oven about 15 minutes

Serve with: whole grain buns, tomatoes, onions, lettuce and secret sauce (see below)

Secret Sauce (not such a secret)

1/2 cup organic or agave sweetened ketchup
1/2 cup dill pickle relish

1. Mix ingredients together
2. This will keep for a month refrigerated

Whole Grain Spiced Tortilla Chips
Mix up the tortillas: sprouted, whole grain, corn, blue and yellow; Feel free to add your favorite spices

12 oz mixed tortillas cut into 1/4 triangles
1/2 tsp ground cumin
1/4 tsp granulated garlic
1/2 tsp chili powder
1/8 tsp cayenne (optional)
1/4 tsp    sea salt
1 tb lime zest (optional)
cooking spray

1. Place cut tortillas in a bowl
2. Toss with remaining ingredients
3. Place on a sprayed baking sheet
4. Bake in a 350 oven about 15-20 minutes until firm and light golden

Roasted Tomato Salsa

4 each tomatoes
1 each jalapeno pepper
1 clove garlic
1/2 each onion
1/2 tsp sea salt
1 tb cilantro chopped
juice from 1/2 lime
cooking spray

1. Place tomatoes, onion and garlic on a cookie sheet sprayed with olive or canola cooking spray
2. Roast in a 350 oven until tomatoes are bursting and bubbling (about 20-25 minutes)
3. Place all ingredients except cilantro in a food processor and blend or chop by hand
4. Add chopped cilantro and serve

Gus' Famous Guacamole
Gus has worked in my kitchen for 13 years. He grew up in Guatemala and this is his Grandmother's recipe. Hint: to keep the guacamole a green color, place the pit from one avocado deep in the guacamole. Just don't bit into it!

5 each ripe avocados
1/2 cup red onions diced small
2 tb freshly squeezed lime juice
1/2 tsp oregano
1 tb cilantro chopped 
1/2 tsp garlic chopped
1/2 each tomato chopped (optional)

1. Pell avocados
2. Place in a wooden bowl; chop or pulverize (I prefer mine chopped)
3. Add remaining ingredients
4. Fold in chopped tomatoes if you desire
5. Garnish with cilantro leaves

Chocolate Dipped Strawberries
Hint: try to use organic strawberries due to the high level of pesticides sprayed on commercially grown

6 oz good quality dark chocolate, chopped
1 qt strawberries
white chocolate or chopped walnuts (optional)


1. Clean strawberries
2. Place chopped chocolate in a stainless steel bowl
3. Melt chocolate on the top of a double boiler, stirring occasionally; remove from stove after melted
4. Place a piece of wax paper or parchment paper on a cookie sheet
5. Dip strawberries in chocolate and place on cookie sheet
6. Place in refrigerator for at least ½ hour
7. Garnish with drizzled white chocolate or roll in chopped walnuts
